Braising and stewing (Part 1)


Gentle braising or stewing of vegetables gives very different results. Vegetables are usually braised by cooking slowly in a covered dish in the oven with the addition only of a little butter, olive oil or liquid, and seasonings such as herbs or spices, including garlic, fresh ginger or chilies. Use robust herbs such as bay leaves, rosemary, thyme and tarragon to braise with vegetables, but only stir in tender herbs such as leaf fennel, dill, basil, fresh coriander and parsley at the end of cooking. Vegetables can also be stewed in a saucepan or casserole on top of the stove, or in the oven, with more liquid, like a normal stew- this can be done more quickly than braising, but doesn’t achieve quite the same melting consistency and intensity of flavors which mingle together irresistible. Apart from the delicious results, it is useful to have a braised vegetable sitting happily in the oven, and needing less attention before you serve the meal.
